Vegas Sun On Vegas Roots

The ZIP code in Southern Nevada with the most residents who are food insecure, according to Three Square food bank, also grows its solution — the Vegas Roots community garden.

An estimated 26.5 percent of residents living in the 89106 ZIP code are food insecure, which is linked to chronic diseases such as hypertension, heart disease and diabetes, according to a July USDA report.

The Vegas Roots community garden, 715 N. Tonopah Drive, was founded more than seven years ago after 5 acres of land was donated to Rosalind Brooks, the organization’s founder. Brooks hopes the garden will help people understand the link between diet and health, in addition to addressing food insecurity in Las Vegas.    > View the entire story 

Why and How to Eat More Plants

Author Michael Pollan puts it quite simply: “Eat Food. Not too much. Mostly plants.”

This may seem easier said than done, but following this advice has wide-reaching benefits, especially on individual health. The typical American diet currently consists mostly of processed foods, meat, and dairy, which contribute to serious health issues including cancer, heart disease, and type 2 diabetes.

By incorporating most plants into your diet, you get an instant boost of vitamins, minerals, fiber, and antioxidants. A plant-based diet can also aid with weight loss, prevent and often reverse chronic diseases, and lower mortality rates. The planet will also thank you: shifting away from a meat-heavy diet helps to combat climate change and pollution.

But fear not! Changing your diet entirely doesn’t have to be done overnight, and it doesn’t have to be daunting. In fact, baby steps can be more effective in making sustainable lifestyle changes. Simply focus on eating more plants, and don’t worry about being perfect.

 

How

Upping your daily plant intake can be easy and inexpensive. Don’t be afraid to get creative! Here are some ideas to get the ball rolling:

  • Participate in meatless Monday!
  • Join a produce subscription program to keep healthy options handy.
  • Try zucchini noodles as a healthy but equally delicious alternative to pasta.
  • Snack on nuts and raw veggies instead of chips and cookies.
  • Make this cauliflower rice (and then eat it!!!)
  • When in doubt, throw it in a smoothie.
  • Experiment with less familiar fruits and veggies, and don’t fear the tofu.
  • Grow your own produce to save on cost and to experience ultimate freshness.
  • At dinner, use meat as a side dish instead of a main entree and double your usual serving of vegetables.

Ease into it, and most importantly, have fun! Whether you adopt a fully plant-based diet or not is entirely up to you, but adding more whole plants into your diet is the goal, not deprivation. Your body, and the planet, will surely benefit!

The Vegas Roots Community Garden is where residents in an under-served community are getting a chance to connect and to grow. The garden is at 715 N. Tonopah Drive, near North Rancho and West Bonanza.

"We are located in a food desert," says founder Roz Brooks. "We are in ZIP code 89106, which has the highest food insecurity out of all the ZIP codes in Clark County."

Mary, Mary, quite contrary, how does your garden grow? Well, if Mary is anything like the multitude of happy gardeners who’ve maintained plots at the Vegas Roots Community Garden over the past seven years, then I’d say it’s growing very well.

Vegas Roots, established in 2010 by Nevadan native and former schoolteacher, Rosalind Brooks (known by all as Roz), rests on five acres just north of downtown Las Vegas. The whimsically decorated, visitor-friendly grounds awakened a previously desolate piece of land. Even though Roz has led a nutritionally healthy lifestyle throughout adulthood, she never factored farming into that equation. The garden “found" her and is now the passion that awakes her each morning. While a solopreneur on this gardening journey, her very supportive husband and two adult daughters are Roz’s biggest cheerleaders.
